x11/gnome: Move from x11/gnome3

The reason for the move is because GNOME has moved beyond version 3,
bumping directly to 40 and iterating major release versions from there.
The Ports version of GNOME is currently at 41, making x11/gnome3
misnamed also.

Mark the fact that now gnome is mosly 3.36.

Actually more 3.38 but because some things like gnome-shell and mutter are
sill 3.36 let's not claim yet we are at 3.38

Some pieces are still 3.38 but will be updated very soon

While here turn the gnome3-lite meta port into a flavor of gnome3

Convert to UCL & cleanup pkg-message (categories x)

Remove esound support from pulseaudio as audio/esound expired.

Bump PORTREVISIONs of dependent ports.

Build-tested in poudriere on a head-amd64 jail for audio/pulseaudio*

Make fonts repecting XDG

Xorg is now looking in ${LOCALBASE}/share/fonts by default
Xorg now accepts symlinks in etc/X11/fontpath.d (as decribed in Xserver(1))
Large cleanup on lots of font ports
All fonts are now properly dynamically generating fonts.dir and fonts.scale
instead of sometime overwriting existing ones)
All fonts are generating fontconfig's cache
Improve consistency in fonts ports

The FreeBSD GNOME team proudly presents GNOME 3.14 and Cinnamon 2.2.
Gnome 3.14.1 and Cinnamon 2.2.16 are supported on FreeBSD 9.3-RELEASE and up.

This commit removes the old GNOME 2 desktop, bindings and some ports that
can't be compiled. A few ports where updated to more recent versions to
allow them to compile with this update.

Apart from updating ports to newer versions

GDM is more integrated with gnome-shell now, and handles several things for
the GNOME desktop such as screen locking. If you want to use GNOME 3 via
startx, you will have to add your own lock screen/screensaver. For example
xscreensaver
can be used for sessions started without GDM.
